Tropical Island Pineapple Chicken simply delicious with CocoPacific

Fancy something exotic? How about Tropical Island Pineapple Chicken simply delicious with CocoPacific coconut oil?

Servings: 4
Preparation Time: 20 Minutes

Ingredients:

2 Table Spoons + 3 Table Spoons of CocoPacific Raw Virgin Coconut Oil 

2 cups uncooked rice

3-4 Medium to Large Chicken breasts sliced or cubed

Salt and Pepper to season

1/4 whole fresh pineapple

2 Cloves of garlic (Crushed or chopped)

1 teaspoon finely minced ginger

1 scallion

2 teaspoons fermented soy sauce

Cook rice and set aside.

Tenderize chicken with the meat mallet. Season the chicken with salt and pepper. Pan sear the chicken until fully cooked through. Rip chicken apart with 2 forks and set aside.

Cut the pineapple into small chunks. Finely mince the garlic and ginger. Chop the scallion.

Heat up a deep skillet or a wok with 2 tablespoons of coconut oil and stir fry the finely minced ginger and garlic with the chopped scallions and pineapple for 2 minutes. Before you take out pineapple add 2 teaspoons of fermented soy sauce and mix well. Put all the pineapple in a separate bowl and set aside.

Heat up the pan again with 3 tablespoons of coconut oil. Put in the rice, pineapple and chicken. Stir fry until well mixed, season with salt to taste and serve.

Like Granola Bars? What about Granola Bars with a Coconut Twist? Here’s a new Recipe for You!!

Servings: 10-12 bars
Preparation Time: 10 minutes

Ingredients

1 tablespoon TIANA Fair Trade Organics Coconut Flour

2 Tablespoons of melted CocoPacific Raw Virgin Coconut Oil

3 cups quick oats (or GF quick oats)

2 tablespoons of ground flax seed

1/2 cup almonds (or other nuts or seeds of choice)

1 cup dried cranberries

3/4 cup of flaked or shredded coconut

1 teaspoon cinnamon

1/2 to 3/4 cup semi-sweet chocolate chips

1/3 cup Maple Syrup

3 eggs

2 tablespoons water

Preheat oven to 200 degrees ºC. Lightly grease a 9×13-inch pan.

Mix dry ingredients in a bowl. Whisk syrup, eggs, oil and water in a separate bowl. Combine wet and dry ingredients and mix well.

Press mixture into prepared pan with a wet spatula. Bake in the oven for about 12-15 minutes, or until the edges start to brown. Let them cool completely before slicing.

Store in an airtight container in the refrigerator for up to a week or freeze.

With six massive games being played out this weekend and extensive TV coverage taking place we thought we would like to share with you some tempting, delicious and easy to make recipes for you to enjoy before, during or after the game using CocoPacific Raw Virgin Coconut Oil.

Pizza Making Goes Coconuts

Pizza with CocoPacific Raw Virgin Coconut oil

 

Ingredients  

3 tablespoons CocoPacific Raw Virgin Coconut Oil (Melted)

1/2 cup (75g) TIANA Fair Trade Organics Coconut baking Flour

1 tablespoon TIANA Fair Trade Organics Premium Organic Crystallised Raw Nectar

2 1/2 cups (300g) wheat flour

1 teaspoon salt

1 1/4 cups lukewarm water

2 teaspoons Active dry yeast

Toppings (amounts as desired):

CocoPacific Raw Virgin Coconut Oil

Barbecue sauce

Cooked lamb or other meat of choice (Chopped into bite size pieces)

Sliced mushrooms

Chopped tomatoes

Mozzarella cheese, shredded

Parmesan cheese, shredded

Salt & pepper to taste, if needed

Using a medium size mixing bowl add TIANA Fair Trade Organics Coconut baking flour, the wheat flour and salt and set aside.

In a large bowl stir 1/2 cup lukewarm water, yeast, oil and sugar, let stand until foamy.

Stir in the remaining 3/4 cup water. Add flour mixture.

Mix together and form into dough. Knead the dough on a floured surface until smooth and elastic.

Form the dough into a ball. Place ball into a bowl greased with extra coconut oil and turn once to coat. Cover with a damp towel and let it rise in a warm place until double in size, about 30-45 minutes.

Once the dough has risen, punch down gently and roll out to your desired shape and thickness. If using a large cookie sheet grease sheet with palm shortening and roll dough out on the sheet to cover.

Brush dough with CocoPacific Raw Virgin Coconut Oil. Spread the barbecue sauce on using the base of the spoon and sprinkle with a bit of mozzarella cheese. Add remaining toppings of choice and top lastly with parmesan cheese.

Pre-heat oven at 200° for fan oven and bake for 15-25 minutes or until golden brown and the cheese is bubbly.

Thai Fish Cakes with a Coconut Slant

Fish Cakes with cocoPacific Raw Virgin Coconut Oil

Ingredients:

1 table spoon (15ml) of CocoPacific Raw Virgin Coconut Oil

2 tablespoons (30ml) of TIANA Fair Trade Organics Coconut Baking flour

300 grams white fish fillets,

1 egg lightly beaten

1 tablespoon fish sauce

2 tablespoons red curry paste

1 -2 red chillies

2 tablespoons of finely chopped coriander leaves

2 raw spring onions, chopped

50 grams green beans, chopped

Salt to season

Step 1: Add the fish fillets, egg, fish sauce, flour, red curry paste, red chillies and coriander leaves to a blender. Blend on a high setting until the mixture turns in to a thick paste consistency Transfer the paste in to a bowl

Step 2: Now add the spring onion and green beans in to the paste. Mix well. Form the paste in to round patties using wet palms. Keep them aside.

Step 3: Heat a table spoon of CocoPacific Raw Virgin Coconut Oil in a large pan and deep fry patties from both sides until golden- browned. Turn off heat Drain patties on an absorbent paper.

Step 4: Serve hot with chilli sauce.

Thai Coconut Curry with CocoPacific Raw Virgin Coconut Oil

How to make Thai Coconut Curry with CocoPacific Raw Virgin Coconut Oil. Why not to spice up your life with a great tasting curry on that Winter Night in?

 

Ingredients for Marinated Meat:

2 boneless, skinless chicken breasts, or approximately 1 1/2 – 2 cups chopped raw chicken, or about 1 pound thinly sliced beef or meat of your choice

1 teaspoon curry powder

1/2 teaspoon ground cumin

1/2 teaspoon ginger, ground, or freshly grated

1 clove garlic, minced

1/2 teaspoon salt

2 tablespoons lemon or lime juice

1 tablespoon corn starch or arrowroot starch, optional

Ingredients for Sautéed Vegetables:

1 tablespoon CocoPacific Raw Virgin Coconut Oil

1 medium onion, thinly sliced

1 thinly sliced bell pepper

1 large peeled and coined carrot

Ingredients for Curry Paste:

2 tablespoons CocoPacific Raw Virgin Coconut Oil

2-3 teaspoons Curry Powder

1 inch grated fresh ginger

2 cloves garlic, minced

1/4 teaspoon hot pepper powder

Ingredients for Coconut Sauce:

2 cups coconut milk*(Made by using TIANA Raw Coconut Goodness)

3/4 teaspoon salt

1 tablespoon CocoPacific Organic Coconut Sugar.

1/4 cup finely chopped basil, optional

Servings: 4

Preparation Time: 45 minutes

Mix all marinated meat ingredients together in a container with a cover, and allow marinading in a refrigerator for at least 3 hours or preferably overnight.

In a medium skillet, melt the coconut oil over high heat and sauté onion, bell pepper and carrot until crisp-tender, about 5 minutes. Remove the veggies and keep warm in a covered bowl.

In the same skillet, melt 1 tablespoon coconut oil. Add the marinated meat and sauté over medium high heat until cooked through, about 10 minutes.

Lower heat to medium and push the meat to one side of the pan. Add the curry paste ingredients to the open side of the skillet and stir together until combined.

Add coconut milk to the skillet. Add the salt and sugar and stir thoroughly to incorporate curry paste. Cook over medium heat until beginning to boil, stirring continuously. Add the veggies and the basil, if using. Serve hot over Jasmine rice.
