Mediterranean Tuna Pasta - CocoPacific Way!

Mediterranean tuna pasta

Ingredients:
2 tablespoons CocoPacific Virgin Coconut Oil
2 tablespoons Extra Virgin Olive Oil
4 gloves garlic, crushed
1 can Tuna in brine, drained
¼ cup chopped black olives
3 tablespoons finely chopped red bell peppers
3 tablespoons chopped capers
1 tablespoon Italian seasoning or dried basil leaves
Salt and pepper to taste
1 (400 gram) pack spaghetti noodles, cooked al dente
1 cup chopped fresh white cheese (ricotta or feta)

Method:

In a pan, heat both the oils. Fry the garlic until lightly browned.  Add the tuna, peppers and capers.

Stir-fry for a few minutes.

Season with salt, pepper and Italian seasoning.   Put in the pasta and toss to coat with the tuna mixture.

You may add more CocoPacific Virgin Coconut Oil if pasta looks dry.

Transfer to a platter and top with the cheese.

Chicken Cordon Bleu

Ingredients:

4 small chicken breasts, skinned and boned
Salt and pepper, to taste
4 slices mozzarella cheese
4 slices ham
1 egg, lightly beaten
6 tablespoon dried wholemeal breadcrumbs
25g butter
1 tablespoon CocoPacific Virgin Coconut Oil

 

Method:

Put the chicken breast between two sheets of grease proof paper and flatten with mallet or rolling pin. Season to taste.
Put a piece of cheese and a piece of ham on top of each piece of chicken. Fold the chicken over to enclose the filling.
Coat the chicken with egg and then with the breadcrumbs
Heat to CocoPacific Virgin Coconut Oil in a large frying pan and fry for 5 minutes on each side, until the breadcrumbs are golden.
Drain on absorbent paper and serve.

Winter Teramisu – cooking with coconut oil CocoPacific way

Ingredients

4 Tablespoons of CocoPacific Raw Virgin coconut oil

2 cups cashew Nuts

4 Medjool dates pitted (add 1 more if its not sweet enough for you)

4 drops vanilla paste

1 cup good quality coffee

1tablespoons of TIANA Fair Trade Organics Premium Organic Crystallised Raw Coconut Nectar

2 Tablespoons of cacao powder

1Tablespoon of maple syrup

12 grain free cookies (see above link in the text for recipe or use vegan biscuits)

Method

Soak the cashew in the fridge for 6-8 hours or overnight

Remove the cashews from the fridge and drain the excess water. Give them a rinse and put them in a high speed blender. Add 1 cup water, 4 dates, 2 table spoons of CocoPacific Raw Virgin coconut oil, 4 drops vanilla paste and blend until very smooth.

In a separate bowl mix the cacao powder, maple syrup and remaining 2 Tablespoons of CocoPacific Raw Virgin coconut oil until combined well.

Sweeten the coffee with TIANA Fair Trade Organics Premium Organic Crystallised Raw Coconut Nectar

Take 6 small ramekins and break up the biscuits into the base of each one. Spoon over some coffee, then layer with a big tablespoon of the cashew cream. Spoon some chocolate mix over the cream and repeat that layering again until the ramekins are full. Either sprinkle some cacao over the top or grate some chocolate of your choice over the top. A combination of shave white and dark chocolate completes a decadent touch.

Cover with cling film and put them in the fridge for a minimum of 1 hour to set. Makes 6

Cooking with coconut oil CocoPacific way – Sauteed Vegetables

Ingredients:

1 tablespoon CocoPacific  Raw Virgin Coconut Oil

2 teaspoons crushed garlic

1 onion, finely chopped

½ cup cubed pork or chicken

½ cup peeled shrimps

1 carrot, cut into strips

1 courgette, cut into strips

1 cup sliced green beans

2 cups sliced cabbage

1 cup water

Salt and pepper to taste

Method:

Cooking with coconut oil ids fun.

In a pan, heat the oil and fry the garlic and onions, until soft. Add the pork and chicken, cook for at least 10 minutes.

Stir in all the vegetables; add water and sauté until vegetables are tender, adding a little water at a time, if too dry.

Season to taste.
