Mushroom and fresh tarragon sauce for steaks - Cocopacific Way!

Mushroom & fresh tarragon sauce for steaks

A fantastic sauce to serve alongside steak that you can make in minutes!

 

Ingredients:
• 2 tablespoon CocoPacific Virgin Coconut Oil
• 1 onion, finely chopped
• 175g button mushrooms, sliced
• 200ml white wine
• 150ml double cream
• 2 teaspoon fresh tarragon, chopped
• 2 teaspoon French Mustard
• 1 clove garlic, crushed
• Salt and pepper to taste

Method:

In a frying pan, heat the CocoPacific Virgin Coconut Oil and sauté the onion for 3 min.
Add the mushrooms and cook for a further 2 minutes. Add wine and simmer for 5 minutes.
Stir in cream, mustard, tarragon, garlic and seasoning and heat gently to warm through.

Banana Chips CocoPacific Way

 

These banana chips are pure joy at any time of the day.

 

Ingredients:

  • 4 bananas, not very mature
  • 500 ml of CocoPacific Raw Virgin Coconut Oil
  • 1 spoon (soup) of lemon zest
  • 1 teaspoon (tsp) cumin
  • 1 teaspoon (tsp) sea salt
  • black pepper freshly ground, to taste

Method:

Peel and slice the bananas on finely lengthwise slices.

In a saucepan melt the CocoPacific Raw Virgin Coconut Oil and go frying the banana slices slowly. Place the banana slices on a plate with paper towels to soak up excess oil.

Transfer to a platter and sprinkle with lemon zest, cumin and season with salt and black pepper.

Ingredients:

3 tablespoons CocoPacific Raw Virgin Coconut Oil (Melted)

1/2 cup (75g) TIANA Fair Trade Organics Coconut baking Flour

1 tablespoon TIANA Fair Trade Organics Premium Organic Crystallised Raw Nectar

2 1/2 cups (300g) wheat flour

1 teaspoon salt

1 1/4 cups lukewarm water

2 teaspoons Active dry yeast

Toppings (amounts as desired):

CocoPacific Raw Virgin Coconut Oil

Barbecue sauce

Cooked lamb or other meat of choice (Chopped into bite size pieces)

Sliced mushrooms

Chopped tomatoes

Mozzarella cheese, shredded

Parmesan cheese, shredded

Salt & pepper to taste, if needed

Using a medium size mixing bowl add TIANA Fair Trade Organics Coconut baking flour, the wheat flour and salt and set aside.

In a large bowl stir 1/2 cup lukewarm water, yeast, oil and sugar, let stand until foamy.

Stir in the remaining 3/4 cup water. Add flour mixture.

Mix together and form into dough. Knead the dough on a floured surface until smooth and elastic.

Form the dough into a ball. Place ball into a bowl greased with extra coconut oil and turn once to coat. Cover with a damp towel and let it rise in a warm place until double in size, about 30-45 minutes.

Once the dough has risen, punch down gently and roll out to your desired shape and thickness. If using a large cookie sheet grease sheet with palm shortening and roll dough out on the sheet to cover.

Brush dough with CocoPacific Raw Virgin Coconut Oil. Spread the barbecue sauce on using the base of the spoon and sprinkle with a bit of mozzarella cheese. Add remaining toppings of choice and top lastly with parmesan cheese.

Pre-heat oven at 200° for fan oven and bake for 15-25 minutes or until golden brown and the cheese is bubbly.

Very Berry Fruit Salad with guilt free Coconut Cream – Cooking with Coconut Oil CocoPacific way

A tasty array of fruit, colour and goodness in one bowl!

Ingredients

1 tablespoon of CocoPacific Raw Virgin Coconut Oil
¼ of a fresh melon such as cantaloupe or honeydew cut into chunks
¼ of a fresh pineapple cut into chunks
2 oranges, 1 of them peeled and sliced into chunks and 1 orange juiced
½ Punnet of raspberries
½ Punnet of strawberries, sliced
½ Punnet of blackberries
½ Punnet of blueberries
½ Punnet of seedless grapes
¼ cup of TIANA 100% Raw Active Pure Organic Honey
Juice of 1 lime
⅓ Cup chopped mint leaves
Instructions
1. Toss fruit together in a large bowl. Whisk the orange juice with the CocoPacific Raw Virgin Coconut Oil, TIANA Fair Trade Organics 100% Raw Active Pure Organic Honey and lime juice. Pour over the fruit and toss with the mint leaves. Let sit at least 15 minutes before serving.
2. As a guilt free extra pour over some Coconut Cream made from TIANA Raw Organic Coconut Goodness (Made by one part Goodness and diluting with two parts water)
